POKOTABI / Ramen toratake
貝出汁らぁ麺 虎武
In Nishi-Shimbashi, Ramen toratake serves ramen with a comforting shellfish broth, clam ramen, seasoned aedama noodles, and clam steamed rice designed to be finished with warm leftover soup.
01 / ABOUT THE PLACE
The ocean aroma rising as a bowl is served immediately whets the appetite. Set in Nishi-Shimbashi, Ramen toratake centers on a rich, nourishing stock coaxed from shellfish such as asari clams and scallops. Lacking heaviness or unpleasant fishiness, each sip yields a clean sweetness and depth that gently soaks in.
The fundamental shellfish broth ramen comes with a choice of salt or soy sauce: salt lets the shellfish profile shine directly, whereas soy sauce offers a mellow harmony between sauce and stock. Those seeking an even more delicate seaside essence can opt for the salt-based hamaguri clam ramen, known for its clear, clean profile. Thin straight noodles with an easy glide are garnished with tender, thinly sliced chashu and diced red onion, while a dab of tabletop yuzu kosho adds refreshing citrus fragrance and peppery heat.
After finishing the noodles, the clam steamed rice is a customary accompaniment. Delicious on its own with the gentle scent of stock, it turns into a lavish porridge-style bowl when warm leftover ramen broth is poured over it. For those craving more noodles, the shellfish aedama—pre-seasoned noodles that can be eaten as they are—can be enjoyed like abura soba or dipped straight into the broth.
With counter seats alongside tables, the calm dining room accommodates solo diners without fuss. A ticket machine accepts cashless payments, including credit cards and various electronic money options, allowing quick ordering. It works well for a brisk midday lunch or a light finishing bowl paired with a beer at the end of the day.
